To continue the Pey Family's legacy of delivering Cabernet Sauvignon with power and elegance, Winemaker Abigail Horstman and Founder Jonathan Pey have traveled to Paso Robles for the 2021 vintage.

Individual lots spent 13 months aging in 100% French Oak before Abigail hand-selected the final blend. Small amounts of Syrah and Petite Sirah — which also thrive in Paso — were added for structure and depth. The result is the signature TEXTBOOK richness yet restraint, allowing this Cabernet to be paired with an array of cuisines or simply enjoyed on its own.

  • The region’s diverse mineral-rich soils, particularly those with calcareous composition, imbue the wine with a distinct minerality.

2022 Sonoma County Chardonnay

Crafted from carefully selected lots grown in the sub-AVAs of Sonoma County, which reaches from west of the Mayacamas to the Pacific Ocean. Fermented in French Oak barrels with partial malolactic fermentation, it offers a delightfully lifted mouthfeel with a weighty mid-palate, balanced by a refreshing bright and fruit-forward character.

We choose small-lots of fruit from our grower partners in Sonoma County’s winegrowing regions west of the Mayacamas. Why? Marine influence from the Pacific cool the vines at night, preserving bright natural acidity and lifted citrus notes.

To achieve both bright acid and a weighty mouthfeel, our Sauvignon Blanc grapes come from two superb sites. Oak Knoll brings zesty citrus;, while sunny St. Helena provides a core of ripe fruit. A combination of stainless steel fermentation with a small percentage barrel fermented results in a luscious, textural mouthfeel and bracing minerality for which classic Sauv Blancs are known.

Textbook Sauvignon Blanc Napa Valley 2020

Vintage: 2020

Varietal: Sauvignon Blanc

AVA: Appellation

  • A spellbinding blend of ripe honeydew, crisp Asian pear, and apple blossom, further enhanced by flavors of Meyer lemon curd.

  • This wine is deal with classic matches like fresh seafood and grilled veggies, but the touch of sweetness and crisp acidity balances out spice and fats, making this a great match for kimchi-jjigae, a spicy Korean stew.

  • None of the lots went through malolactic fermentation as our goal was to capture freshness. We created texture and complexity through careful aging in neutral French oak.

Our Vision

Hand-picked grapes sourced from two growing appellations; Oak Knoll and St. Helena. Fermenting the majority in stainless steel brought the fruit flavors to the forefront, but a small portion was barrel fermented in neutral French oak to create a rounder mouthfeel. Frequent bâtonnage or “stirring of the lees” achieved beautiful texture.

  • Oakville's gravelly alluvium and loam soils stress the vines, leading to rich aromatic and flavor complexity, while Oak Knoll brings a "pop" of bright cherry and vibrant red fruit.

  • An essential accompaniment to a medium-rare filet, spring lamb dishes, and the ever-popular charcuterie board.

  • Cabernet Sauvignon is blended in to provide a strong backbone and tannin structure, which perfectly balances the plush texture of Merlot.

Our Vision

We like to think of our Napa Valley Merlot as our right place, right time wine. You’d be hard-pressed to find a California region where Merlot flourishes better than in the Napa Valley. The slightly longer growing season allows those lush, plush qualities to mature while also giving enough space for the fruit to come to life. The ideal amount of tannin gives the wine enough structure for aging.
