The touchstone of the TEXTBOOK portfolio, restraint over power was Abigail’s goal while crafting Oakville Mise en Place Cabernet Sauvignon. Incredibly rich in color, it showcases aromas of black currants, juicy plums, dark chocolate and baking spices. The palate has beautiful structure and ripe tannins with an excellent, lengthy finish. This wine will age well up to fifteen years.

  • “Mise En Place” is a French culinary phrase meaning “everything in its place.” This name reflects the preparation and diligence exercised in thevineyards and winery.

  • Grape clusters were field-sorted, hand-harvested, hand-sorted at the winery. Fruit was de-stemmed and cold soaked for two days.

  • After 31-33 days on the skins, lots were gently pressed into barrels to complete ML.

  • Grape clusters were field-sorted, hand-harvested, hand-sorted at the winery. Fruit was de-stemmed and cold soaked for two days.

  • After 31-33 days on their skins, we gently pressed into barrels where the lots completed malolactic fermentation over the winter.

Given the unmatched quality of the Holmes Vineyard, making a Merlot-centric blend from Oakville became an essential for us. Cabernet Sauvignon gives structure to the Merlot’s plush nature while allowing the fruit to be in the spotlight. Field sorting and hand-harvesting protected the integrity of the fruit for a wine.

To continue the Pey Family\'s legacy of delivering Cabernet Sauvignon with power and elegance, Winemaker Abigail Estrada and Founder Jonathan Pey have traveled to Paso Robles for the 2021 vintage.

Individual lots spent 13 months aging in 100% French Oak before Abigail hand-selected the final blend. Small amounts of Syrah and Petite Sirah — which also thrive in Paso — were added for structure and depth. The result is the signature TEXTBOOK richness yet restraint, allowing this Cabernet to be paired with an array of cuisines or simply enjoyed on its own.
