2022 Mise en Place Cabernet Sauvignon
The touchstone of the TEXTBOOK portfolio, restraint over power was Abigail’s goal while crafting Oakville Mise en Place Cabernet Sauvignon. Saturated in color, it showcases aromas of briary blackberry, Satsuma plum, and cassis. The aromas carry over on the palate, developing into black cherry, dark chocolate, and mocha flavors, with dense, plush tannins and a lengthy finish. This wine will age well up to fifteen years.

“Mise En Place” is a French culinary phrase meaning “everything in its place.” This name reflects the preparation and diligence exercised in thevineyards and winery.

Grapes are sourced from two vineyards situated on the west side of Oakville: Holmes Vineyard, a highly regarded vineyard with which we have a long-standing relationship; and Lincoln Creek Vineyard, a certified organic vineyard producing the popular Cabernet Clone 7. These vineyards lie in close proximity to several renowned cult Cabernet Sauvignon vineyards and are dedicated to farming for the superb quality

Grape clusters were hand harvested, then de-stemmed at the winery. Fruit was cold-soaked for two days. After 10-36 days on the skins, lots were gently pressed into barrels to complete ML. Aged for nearly 2 years in French oak from the highest quality cooperages: Nadalié and Giraud.

By using slow, gentle methods like hand harvesting and hand sorting, along with aging in French Oak barrels, we designed this wine to show restraint, a quality that translates into a taste experience that reveals rather than overpowers.
