“Mise En Place” is a French culinary phrase meaning “everything in its place.” This name reflects the preparation and diligence exercised in thevineyards and winery.

Grapes are sourced from two vineyards situated on the west side of Oakville: Holmes Vineyard, a highly regarded vineyard with which we have a long-standing relationship; and Lincoln Creek Vineyard, a certified organic vineyard producing the popular Cabernet Clone 7. These vineyards lie in close proximity to several renowned cult Cabernet Sauvignon vineyards and are dedicated to farming for the superb quality

Grapes were hand-harvested, gently de-stemmed, and cold-soaked for two days prior to fermentation. After 34-40 days on the skins, lots were gently pressed into barrel to complete malolactic fermentation. Aged for nearly two years in French oak from renowned cooperages Nadalié and Giraud.

By using slow, gentle methods like hand harvesting and hand sorting, along with aging in French Oak barrels, we designed this wine to show restraint, a quality that translates into a taste experience that reveals rather than overpowers.
