The 2023 growing season in Paso Robles was extended due to the wet winter and cool spring weather, allowing extra hang time for fruit to develop flavor, without sacrificing acidity. The resulting wine shows beautiful complexity and depth, with concentrated fruit flavors including dark cherry, blackberry, and cassis. Aging in French oak deepens our flavor profile, contributing to the tobacco and spice notes. The structure is firm but approachable, providing a fine backbone for the rich fruit.

    ESTRELLA VINEYARD, ESTRELLA DISTRICT – Hot days and moderate evenings foster ripe fruit flavors and well-developed phenolics.

  • EL POMAR DISTRICT – Near the Templeton Gap, cool marine air allows grapes to maintain acidity and develop complexity over a prolonged growing season.

  • GENESEO DISTRICT – The warmer climate ensures ripe fruit, balanced acidity, and refined tannins.

  • SAN MIGUEL DISTRICT – Limestone soils lend a distinct minerality to the wines, which tend to be full bodied with well integrated tannins.

To continue the Pey Family\'s legacy of delivering Cabernet Sauvignon with power and elegance, Winemaker Abigail Estrada and Founder Jonathan Pey have traveled to Paso Robles for the 2021 vintage.

Individual lots spent 13 months aging in 100% French Oak before Abigail hand-selected the final blend. Small amounts of Syrah and Petite Sirah — which also thrive in Paso — were added for structure and depth. The result is the signature TEXTBOOK richness yet restraint, allowing this Cabernet to be paired with an array of cuisines or simply enjoyed on its own.
